Barbecue Ribs

Fall off the bone baby backs, baby!

Ingredients

  1. PRESSURE COOKER
  2. PAN FOR BROILING
  3. BRUSH FOR BASTING
  4. Baby back ribs (fuck st louis)
  5. Bbq sauce (sweet baby ray’s duh)
  6. Apple cider vinegar
  7. Water
  8. Dry rub: either pre made or combinations of paprika, garlic powder, onion powder, salt, pepper, etc. The more the merrier!

Wet Rub

In a pot over low temperature simmer barbecue sauce, water, and apple cider vinegar. Just eyeball, it’ll be liquidy then thicken as it simmers.

Process

  1. Lay out your ribs
  2. Dry rub the fuck out of them on all sides. Be generous.
  3. Let sit for 1 hour
  4. In pressure cooker put down the trivet and 1 cup of water.
  5. Put in the ribs (I cut 2 racks into 4 pieces and they fit in one go)
  6. Pressure cook on high for 17 minutes (baby backs) or 19 (st louis)
  7. Put rack on top of oven and turn on broil on High, leaving the oven cracked
  8. After ribs are cooked and pressure is released (be careful)
  9. Transfer to pan and baste top side thoroughly
  10. Broil for 2 minutes
  11. Take out, rebaste top, flip, baste bottom thoroughly
  12. Broil for two minutes
  13. Repeat the basting and flipping for a total of 3 broils on each side. Each time more and more char will slowly develop
  14. Eat Up!
